Growing up in Moab Utah we lived by the Navajo Indian reservation and my dad worked as a Social Worker on the reservation at times. Not sure if that was when we started having Navajo tacos for dinner, but they were my favorite meal.

So after a visit to my Parents a few weeks ago and a trip to a little county fair and a Navajo taco stand, I decided to look on Pintrest for a recipe and I found a fast and easy method and here is the result, Jerry started eating before I could get a good picture, but I took one anyway..I did modify the recipe just a bit to accustom to our taste, so here's what I did but you can add or take away anything you want, ENJOY
Directions

Heat a small pot of oil on the stove. You’ll want it to be about 3-4 inches deep- just enough oil in the bottom to completely cover the dough while frying it.

Meanwhile, place 3-4 frozen bread rolls on a plate in the microwave and cook them for 30-45 seconds. You just want them to be soft enough to flatten out, but if you cook them any longer they will start to harden around the edges or take out the dough balls you need and leave on counter for about an hour.

Using your hands, flatten the soft dough into pancake-like saucers. 1 roll is perfect for a kid-sized portion, but if you have some hungry adults, combine 3-4 rolls of dough and flatten them together.

Carefully place your flattened dough (1 at a time) into the oil and watch it carefully as it begins to brown. If it gets too brown too quick, your oil is too hot. Use metal tongs to flip the dough as needed to ensure the entire piece is golden and cooked through.

Remove the fry bread from the oil on a plate lined with paper towels to absorb left-over oil. Dab each piece with more paper towels as necessary.

Repeat until you have enough fry bread for everyone.

You can also do dessert taco, by adding butter and fresh fruit and whipped cream. YUM..

2. Warm oil in a large skillet over medium-high heat. Add onion and cook, stirring frequently, until tender and translucent, about 3 minutes. Add garlic, sprinkle with chili powder and cook, stirring, until fragrant, about 1 minute longer. Stir in beans and tomatoes. Cook, stirring, until just warmed through, about 2 minutes. Stir in lemon juice and cilantro. Season with salt and pepper.

3. Spoon bean mixture onto center of chips and spread evenly. Sprinkle cheese evenly on top. Broil, watching constantly and turning pan often, until nachos are hot and cheese is bubbly, about 1 minute. Remove pan from broiler, sprinkle avocado over nachos and garnish with dollops of yogurt. Transfer to a platter and serve immediately.

1 cup heavy cream (must be heavy cream — half and half will not work)

Place chocolate chips into a bowl and pour cream over the top. Heat in microwave until chips are soft. Allow mixture to sit a minute to continue melting the chips. Stir well. Let mixture come to room temperature. With electric mixer beat until fluffy. Fill pastry bag with large star tip and pipe onto cupcakes.

Enough frosting and filling for 12-15 cupcakes depending on your frosting and filling style.

If you love Rice Krispy Squares you'll love this recipe:
you don't even have to be a coconut fan..

all you do is replace the butter to coconut oil and it gives it a different taste..a bit creamer texture.
Josh doesn't like the taste of coconut and when he tasted one, he said "what is different" to which I replied "different good or bad?" Good he said ..success, I didn't tell him my secret ingredient.
I have purchased my coconut oil at amazon but now buy it at trader joes, but look in any health food store and you should have no problem finding it, I buy 2 bottles because I use one for cooking and one as a moisturizer, make up remover, massage oil, foot cream, I love this stuff, it smell wonderful and it makes your skin soft..So go buy two, you'll be happy you did, you can replace any recipe with butter or oil for coconut oil, even frying with it..just experiment with different recipes. ENJOY!

3 T. Coconut Oil
1 Package (10oz, about 40) regular marshmallows, or 4 cups miniature marshmallows.
6 cups Rice Krispies cereal

Melt coconut oil and Marshmallows on low heat, Stir until completely melted. Remove from heat.
Mix in Rice Krispies cereal, Stir until well coated
Spread the mixture using a buttered spatula or waxed paper evenly into a 13x9x2 pan coated with cooking spray.
Cut into 2 inch squares when cool
Best if served the same day or store in air tight container for 2 days.

Instructions

1. Prepare rice according to the package directions. Set aside, cover, and keep warm until serving.

2. In the meantime, whisk the orange juice, liquid aminos (or soy sauce), and cornstarch in a medium bowl until the cornstarch is completely dissolved. Add the orange peel and mix.

Add the chicken to the skillet or wok and stir fry until the onion is crisp-tender and the chicken is cooked through, about 4-5 minutes. Add snow peas (or sugar snap peas) and the orange juice/cornstarch mixture.

5. Toss until the sauce thickens and comes to a boil and the peas are crisp-tender, about 3-4 minutes. Season with salt and pepper and serve with rice.
