Easter means so much more then candy..(but candy is still good :)

This year for Easter, as a family we decided to forgo the  Easter baskets and do something for someone else..Since the celebration of the Resurrection of the Savior is Easter..we want to share that love with someone else, now if my children were little we'd probably do both, but they aren't and think it is a great idea (as long as they still get their See's candy marshmallow egg) so we will be making up some fun little baskets to give away to others who might need some happiness..I thought these cute little birds would be a great addition so check out Martha and see all her good ideas..

Potato Egg Bake..Breakfast or Brunch or heck why not dinner!!

We had this in Florida for breakfast one morning, it was at the breakfast bar and  it was so good and I thought "what  a great idea for a fun breakfast at home, so here is a recipe that looks like how they made it..Enjoy!

Prep Time: 10 minutes
Other: 1 hour, 5 minutes
Yield: 4 servings

Ingredients

  • 2  baking potatoes
  • 2  tablespoons  butter
  • 1/4  cup  grated Parmesan
  • 2  precooked turkey sausages, diced
  • 4  large eggs

Preparation

Heat oven to 400° F. Scrub the potatoes and pierce each with the tines of a fork. Bake until fork-tender, about 45 minutes. Carefully cut each potato in half. Scoop out the insides and stir in the butter and cheese. Fold in the sausages. Spoon the mixture back into the potato halves, creating a hollow in each center. Break 1 egg into each hollow. Arrange on a baking sheet and cook 10 to 15 minutes or until set.
