Hot Cranberry Cider

Fall is in the air and I love Hot Cider for the Holidays..so I thought I'd share this early so you can look forward to the cold weather..

Hot Cranberry Cider:

Honey butter (recipe on bottom)
2 bottles (about 48 ounces each) cranberry juice cocktail
1 1/2 quarts apple juice or apple cider
2 large oranges, unpeeled, thinly sliced

Prepare honey butter mixture; set aside, Combine the cranberry juice and apple juice; heat, uncovered over medium heat, stirring occasionally, until mixture just comes to a boil. For each serving, spoon 1 scant T. of the honey butter into the bottom of a 6 ounce mug and fill with the hot cranberry mixture. Cut orange slices in half and float one half in each cup.. For a single serving, spoon honey butter into a mug, add half of an orange slice, and fill with cold cranberry juice mixture. Heat in a microwave oven 1 -2 min. until mixture is hot.
Yield: 4 1/2 quarts.

Honey Butter:
3/4 cup butter
3/4 honey
4 T. ground coriander

Combine butter, honey and coriander in a small saucepan and cook over low heat, stirring often, until butter melts. Or microwave butter, honey and coriander 1-1 1/2 min. on full power until better melts; remove and stir to blend..
